Vegetable Hakka Noodles

Recipe serves 4

Ingredients :

400 Grams Hakka Noodles
1 Cup finely chopped cabbage
1/4 Cup chopped spring onion
1/2 Cup green capsicum cut into strings
1/2  Cup carrots cut into strings
1/4 Cup bean sprouts
1/4 cup french beans chopped(optional)
1 Tablespoon finely chopped garlic
1 Tablespoon finely chopped ginger
2-3 Green chili finely chopped
1 Tablespoon Vinegar
1 Tablespoon Soy Sauce
1/2 Tablespoon Olive oil
1/2 Teaspoon Sesame oil
1/4 Teaspoon Ajinomoto
                                                                                                 Salt to Taste
                                                                                                 Chili flakes(Optional)
                                                                          

Method :


Heat 8 Cups of water in the sauce pan and add salt to it. Bring it to boil add noodles to it. Cook it for 7-8 minutes or until tender.
Once the noodles cooked completely put them in the colander or strainer. Run the colander under cold water and add 1/4 teaspoon of sesame oil. Mix noodles well with the help of fork . It avoids noodles from getting sticky .
Heat the wok before you start and make sure all of the water and moisture has ebaporated before you add oil.
Now heat 1/2 tbs of olive oil into wok. Keep flame on high . Add chopped ginger and garlic.
Now add Spring onion, all Vegetables. Fry it on high flame so that it will get nice smokey flavour. But keep stirring continuously to avoid it from burning .
Now add 1/4 Teaspoon ajinomoto, Soy sauce and vinegar and salt. Give it a quick stir.
Using your spatula to scrape the bottom of the wok clean so the bits sticking to the wok do not burn.
Now add noodles to it and mix everything gently. Use two spatulas to mix the noodle well.
Stir fry for 2-3 minutes and serve hot.
Sprinkle red chilli flakes if you want to elevate a spice level up.Enjoy!
