Kaju Katli

Kaju Katli Or Kaju barfi is an indian dessert made with cashew nut powder and sugar. It is very popular sweet traditionally eaten for all Indian festivals, specially during Diwali. There are different methods to make Kaju Katli. Some people make it with sugar syrup or some uses just sugar powder. I have tried various recipes and today I am sharing the wining recipe :) Enjoy!

Ingredients :

1 Cup Cashew
1/2 Cup Sugar
1 Tsp Cardamom powder 
1 Tbs Clarified buter(Ghee)


 

 

 

 

 

Method :

Soak Cashew nuts in the water for about 1-2 hours.Soak until you feel cashews soft from inside.

Once cashews are soaked, drain the water and ground cashews in the blender to the fine paste.

Heat the non stick pan and add cashew paste and sugar to it.


Keep flame on medium to sim .

Keep stirring the mixture until you see the mixture is leaving the edges . It will take about 8-10 minutes to get desired consistency.

Now add Cardamom Powder and Mix well.

Once mixture is thickened and starts leaving the edges , turn of the gas .

Take out the Cashew mixture in one medium bowl. Let it enough cool so that you can handle the heat to knead the dough.

Once the mixture is enough cool, Take some ghee and knead the mixture and make a ball.

Now grease the rolling pin and the platform with ghee.

Now take the cashew mixture ball and start rolling it. Roll it to half to 1/4 inches thick.
                                                   
Draw lines lightly with the knife tip and then cut into diamonds to get perfect forms .




Let it Completely cool and serve.

You can refrigerate it upto 10 -12 days in the air tight container.
