Kesar Srikhand Recipe- Indian Yogurt Custard 


 Ingredients 

 2 cups of Yogurt (500 gm)
 3/4 cup of Powdered sugar(50-60 gm)
 4-5 strands of Saffron
 1 table spoon warm milk
 1 teaspoon  of cardamom powder
 1 tablespoon crushed dry fruits as 
    per your choice  (Almonds, Pistachio )


Method 


Spread muslin cloth over the strainer and pour the yogurt on it.

Wrap the yogurt in muslin cloth and make a tight knot.

Hang it for about 3-4 hours until all water drained off the curd. Keep any container below it so it will collect all drained liquid from yougurt.

After 4 hours take yogurt out of the cloth. It should come out as a thick ball (should be enough thick). Grate yogurt with grater. so that there wont be any lumps .

Now add powdered sugar, cardamom powder and crushed dry fruits to the grated yogurt. Add saffron strands to the warmed milk and keep it for 3-5 mins. 

After 5 minutes add saffron milk to the yogurt and mix it with a whisk or spoon.

Mix it well all together and keep it in refrigerator to chill at least for an hour .

Serve The kesar Srikhand with Puri, Chapati or Roti
